Whilst I understand that today's title includes an incredibly bold claim, I completely stand by it and refuse to retract my statement - my brownies are the bomb dot com. Aside from the odd mug cake here and there, I haven't indulged in an awful lot of baking during this quarantine period and, upon waking up this morning, the voices inside my head (I'll blame them for the future weight gain) were practically begging for some gooey, fudgy, irresistible chocolatey goodness. So, logically, I made the decision to whip out my apron and oven gloves (figuratively - I don't suit aprons) and bring you guys a recipe you'll never forget.
Ingredients:
- 10 tablespoons of softened unsalted butter
- 2 tablespoons of coconut oil
- 110g of caster sugar
- 110g of dark brown sugar
- 1 generous teaspoon of honey
- 2 eggs
- 2 teaspoons of vanilla extract
- 1/8 of a teaspoon of salt
- 110g dark chocolate
- 80g plain (all-purpose) flour
- 40g cocoa powder
- extra dark chocolate (for the topping)
- crushed nuts of your choice (for the topping)
Method:
1. Preheat your oven to 180°C (350°F) and line your chosen tin (I recommend a 20cm tin (approx. 8-inch) with parchment paper. In order to make the paper stick perfectly, use a pastry brush to spread a little bit of melted butter or coconut oil on the base and sides of the tin before lining it.
2. Place the butter and coconut oil into a large bowl and cream them together with the sugar (both the caster and the dark brown sugar) and honey until you achieve a creamy, caramel-coloured mixture.
3. Next, add in the eggs, vanilla extract and salt and stir until well combined. Be sure to go slowly with the eggs as, evidently, you do not want your mixture to curdle.
4. Chop or break the chocolate into small chunks and place it into a microwavable bowl. Pop the chocolate into the microwave and heat it until melted, being sure to stop and stir it every 20-30 seconds - burnt chocolate is disgusting, guys. If you're nervous of burning it, you can, of course, ditch the microwave and place the bowl of chopped chocolate over a second bowl containing hot water - the steam from the water will melt the chocolate at a slower, more manageable pace.

5. Leave your melted chocolate to cool down for 1-2 minutes (we're not looking to scramble the eggs today) before pouring the entirety into the main mixture and stirring until it's completely incorporated.

6. Last but not least for the mixture, sift in the flour and the cocoa powder and gently fold. And, just a little something to take note of: mixing too vigorously at this stage means that you're likely to stretch the gluten in the flour, giving it a more bread-like texture - if you're baking any type of cake, the moment the flour goes in, immediately switch your stirring action to a folding action.
7. Transfer the mix into your lined tin and spread it evenly around, making sure not to miss the corners. If you're a true chocolate fiend like myself and don't have the patience to wait for the final product then, yes, it's at this point that you may lick the bowl (shameful).
8. The fun part awaits us: sprinkling over the toppings! Now, in the ingredients list, I did give recommendations for this based on my personal taste, however, you can essentially add whatever you fancy. M&Ms? Go for it. Flaked coconut? Sure, why not? Oreo pieces? DELICIOUS. It's totally up to you. For today, I've chosen to chop up a few more squares of my amazing dark chocolate and generously scatter the pieces on top, along with some crushed pistachio nuts.
9. Pop the mixture into the oven and bake for 20-23 minutes (precise, I know, but after 23 minutes I find that they begin to enter into cakey territory so, unless that's your preference, avoid leaving them in for too long). Once your brownies are out of the oven and have cooled down, all that's left to do is cut (aim for about 9 pieces, 6 if you're mega greedy) and serve!

This recipe (created by yours truly) is always a winner with adults and kids alike; the combination of ingredients is total perfection. If you want to turn out KNOCKOUT brownies every single time, don't hesitate to give these a try as, quite frankly, they're effortless, insanely chocolately and just utterly delectable.

I think I gained weight just reading about the brownies. I know that I would have thrown in some caramel, for good measure.

This sounds delicious! I recently tried making homemade brownies, but they were too cakey, not fudgey. I'll have to try your recipe. I like that there is coconut oil in it.
